Curried Stuffed Sweet Dumpling Squash

1/2 pound Sweet DumplingSquash3 oz ground top sirloin1 tbsp Pine Nuts 6 peeled and quartered pearl onions 2 tsp Mader Jaffrey's Curry powder2 tsp Extra Virgin Olive Oil1/2 c cooked Lundberg Wild/Brown Rice blend1/2 tsp kosher salt
Cut the top from the squash and remove the seeds. Cut and chop about 3 Tbsp of the meat of the squash.
Combine the remaining ingredients and press the resulting mixture into the cavity of the squash.
Bake in small covered casserole for aprox an hour or until the interior reaches 212 degrees. Allow to rest at least 30 min before serving.
Making it the day before and reheating will improve flavor.
