Six Bean Salad

1 can garbonzo beans, drained & rinsed1 can black beans, drained & rinsed1 can lima beans, drained & rinsed1 can red kidney beans, drained & rinsed1 can green beans, drained & rinsed1 can wax beans, drained & rinsed1 large white onion, chopped1 stalk of celery, chopped2 jars red pimentos, sliced3/4 cup Splenda sweetner1 cup white vinegar1/4 cup canola oil1 teaspoon salt1/2 teaspoon pepper
In a large bowl combine first 9 ingredients.
In another bowl combine remaining ingredients.
Stir and pour over bean mixture.
Chill overnight.

Something does not add up right. There ought to be more protein and fiber in this mix. OK, just noticed under ingredients - all beans are less than a cup when in reality, a can has 3-4 servings-2 cups. So, what size can are we talking about? I would use EVOO and no splenda for me! - 3/18/09
