Mary's Shrimp Creole

Ingredients
5 cups chopped onion3 cups chopped celery9 T vegetable oil2 cloves garlic12 tomatoes (or 12 cups canned)5 T flour5 T chili powder2 T salt2 T sugar2 T white vinegar3 lbs small shrimp..peeled
Directions
Mix dry ingredients in small mixing bowl and add the vinegar and about 1 cup water..mix well

Dice tomatoes (if you use fresh) and set aside

Boil at least 3 lbs shrimp...remove from water and keep stock

Saute onion, celery, and garlic in oil till tender

Add the flour mixture and stir till thick

Add tomatoes and 2 cups of stock from shrimp

Simmer for at least an hr...add more stock if too thick...

Makes about 10 1- 1/2 c servings

Serve over rice and add shrimp as desired...about 12 per 1.5 cup serving
