Grilled Island Strip Steak

Ingredients
* Butter, unsalted, 1 tbsp * Shallots, 4 tbsp chopped * Onions, raw, 1 cup, chopped * Garlic, 3 cloves * Chicken stock, home-prepared, 3 cup * Rum, 8 fl oz * Molasses, 2 tbsp * Beef, round steak, 32 oz
Directions
1. Heat butter over medium high heat. Add shallots, onion, garlic. Cook, stirring until translucent (5 min.)
Add rum and simmer until liquid is reduced to 1/3 cup. Add chicken stock and boil. Reduce heat and whisk in molasses. Simmer until liquid is reduced to 2 cups.

2. Grill steaks with salt and pepper to taste Plate steaks on warmed plates and top with caramelized onion glaze.
