Oatmeal Pancakes with Strawberry Sauce

Ingredients
1/3 cup rolled oats (not instant or quick)2 egg whites2 tbsp applesauce1 tbsp yogurt or kefir1/4 tsp cinnamondash nutmeg1/4 tsp vanilla extract1 1/2 cups frozen strawberries, defrosted and juices reserved.
Directions
In small/medium bowl, mix all ingredients but strawberries. Let sit for 3 minutes to thicken.

While mixture is thickening, puree strawberries and juice in food processor or blender, or mash with fork. Put in a small saucepan and heat over low until hot. Cover and set aside.

After oat mixture has thickened a little bit, drop into 3 pancakes and cook 2 minutes on one side, then flip and cook until no longer runny on the inside (2-3 mins).

Remove to plate and top with strawberry sauce.

Makes 3, 3 1/2" pancakes and about 3/4 cup of strawberry sauce, serves 1.

    If I let the oatmeal soak a little longer than the recipe says - maybe 8+ min? this works well. The seasoning is great and it is fast to make. Thanks for contributing. - 6/3/12

    very good quick & light breakfast, didnt have strawberries so topped it with maple syrup and i didnt have applesauce so i doubled yogurt and it was yummy :9 - 3/3/12

    My frying pan did not make these look pretty- but they smelt fantastic while cooking. I dropped the nutmeg, and doubled the cinnamon, and used fresh strawberries from the garden, which was wonderful. I would make this again, but try a new pan! - 1/22/09
