Salmon Cakes

Ingredients
1 large can pink salmon (418 g) bones removed1 egg10 whole wheat crackers, crushed2 tablespoons light mayonnaise1 small onion, diceddash of salt and pepper to taste
Directions
Debone salmon. Mix all ingredients together and form into 5 patties. Fry in skillet with tablespoon of olive oil, until golden brown.

    Very good base recipe. Add chopped green onions and bell pepper along with dash of lemon
