Chicken Tortilla Soup

Ingredients
3 cups water2 cups salsa2 - 10 oz can chunk breast of chicken, drained and flaked1 (15oz) can black beans, drained and rinsed1 (11oz) can corn with red and green peppers1 (1 1/4 oz) pkg taco seasoning mix3 tsp low sodium chicken bouillon
Directions
In large saucepan combine water, bouillon, taco seasoning mix, and salsa. Bring mixture to a boil. Reduce heat and simmer for 5 minutes. Add chunk chicken, black beans and corn. Heat until warmed through, about 10 minutes.

Makes 6 - 1 cup servings

    I've had this before. I think it was a Weight Watcher recipe. It was wonderful. I couldn't believe how a simple soup could be so good. I lost the recipe, so it's great to see it again. - 12/20/08
