Cheater Chili - Vegetarian (1 cup serving)

Ingredients
1 can (15.5 oz.) black beans1 can (15.5 oz.) light or pink kidney beans1 large can (30 oz.) dark red kidney beans2 jars (24 oz. each) salsa1 can (6 oz.) tomato paste2 large cans (28 oz. each) tomatoes, diced is fine.2 tsp. ground Cumin1.5 Tblsp. chili powderminced onion to tasteminced garlic to taste
Directions
Combine ingredients and simmer for at least 1 hour. Stirring often

If adding 2 pounds of ground beef or ground turkey: brown meat first, drain fat, add onion and garlic and then the remaining ingredients. Simmer for at least an hour. Stirring often.

    Reminds me of the five can chili that I learned to make at a restaurant: One can of each; tomatoes, mushrooms, corn, beans, tomato soup - all added to a pound of ground beef. Make it with taco seasoning or chili powder. Using up salsa in chili is a great idea - keep it from going bad/ moldy. :) - 9/21/13

    I added ground red pepper and some liquid jalepino sauce for some extra kick. Also threw in TVP (texturized vegetable protein) and some lentils. - 12/9/08
