Crock Pot Shredded Beef

4 lbs. Bottom Round beef2 cans beef broth2 pkgs. Lipton Onion Soup mix1 lg onion- sliced2 red peppers- slicedIf you want sandwiches, serve with some crusty french bread.
Makes 12 1-cup servings. This is approximate, and if anything, it makes more. I usually freeze half.
Slice the onions and peppers into strips and place on the bottom of the crockpot (you can use a bag of frozen pepper strips if you want to save time). Trim the fat from the beef and cut the roast into 3 or 4 strips (it will be easier to shred when it's done). Sprinkle 2 packages of Lipton's Onion Soup mix over the beef. Add 2 cans of beef broth, but leave some of the dry mix on top of the beef. Cook on low for 8-10 hours. Prior to serving, shred the beef using two forks.
