Geoff's Moroccan Chicken Potato Crock Pot Stew (1 C serving)

1 medium onion, chopped6 cloves garlic, minced2 14.5 oz cans stewed tomatoes, undrained4 medium potatoes, cut into bite-size pieces1 C chopped carrots1/2 C raisins1 t salt1 t ground cumin1 t cinnamon1 t curry powder1 t ginger1 t crushed red pepper4 skinless boneless chicken breast halves (8 oz each)juice of 1 lemon (about 2 T)
1. Place onion, carrots, potatoes, tomatoes, raisins, garlic, and spices in crock pot and stir. Place chicken breasts on top or stir in.
2. Turn crock pot on low for 8-10 hours.
3. Add lemon juice just before serving.
Makes about ten 1 C servings. My 3 year olds love it with rice if I cut out the red pepper. Easy and very tasty!
