Microwaved Summer Squash

  • Number of Servings: 6
Ingredients
2-quart round casserole dish with lid or plastic wrap4 - 6 summer squash cut into 1/4" slices2 tbsp water1 tbsp garlic powder1 tbsp light margarine
Directions
Put water and squash in the casserole dish and cover with lid or plastic wrap. (If using plastic wrap, pull open one corner to allow for steam.)
Microwave on HIGH for 5 to 9 minutes.
Stir every 4 minutes to test for tenderness and to rotate dish if your microwave does not do this for you.
Add margarine and garlic powder.
With lid on, let stand for 3 minutes.
Stir and enjoy!

    I tend to over steam my veggies over the stove, so doing this time in the microwave for 3 minutes: with NO garlic (don't do garlic on veggies), and lemon pepper with all seasoning instead made it pretty delicious. This is going to be my goto for steamed veggies....using the microwave. - 3/2/11

    There is WAY too much garlic in this. I love squash and I love garlic. I steam squash at least three times a week and this isn't much different than doing that. - 12/13/08
