Spinach Quiche

Pillsbury refrigerated Pie Crustfrozen spinach, 10 oz pkg6 baby carrots, sliced thin1/4 C chopped onion2 whole eggs2 egg whites1/2 C non fat yogurt1/2 C cottage cheese, 1.5%1/2 C 4 blend cheese, 2 %nutmeg, paprika, pepper, salt to taste
Prepare and bake empty pie crust for 5 minutes at preheated 425 oven - set aside to fill
Filling: cook spinach, carrots, onions in micro wave. Drain well, squeeze excess water out, make sure it is dry using paper towel.
Mix together eggs, yogurt, cottage cheese
Combine spinach mixture, egg mixture and shredded cheese, leaving a sprinkling of cheese for the top.
Put in pie shell and bake at 400 for 10 minutes then lower to 350 for additional 30 minutes.
Sprinkle spices, nutmeg, paprika, on top with cheese before baking.
Let pie cool before cutting.
Makes 1 pie - 8 servings.
