1 Large EggplantWhole Wheat Flour3 Eggs (2 whites, 1 whole)Skim MilkItalian Seasoning or any seasoningsCanola Oil
Slice eggplant into 1/4 in. thick slices. Mix egg, egg whites and milk in small mixing bowl. Mix flour and herbs in a cake pan or other shallow dish. Heat canola oil in large skillet on med heat. Coat eggplant slices in egg mix then dip in flour mix then repeat. After second coat of flour sear in heated oil until coating turns golden brown- Enjoy!!
