Spicy Chipotle Turkey Meatball Soup

Ingredients
-1 cup diced celery-1 cup diced carrots-1 cup diced onion-3 cloves garlic (chopped)-1 tblsp olive oil (to saute veggies)-1 can black beans-1 can diced tomatoes and green chilis-1 bag frozen corn (I used roasted corn from Trader Joes)-1 can chipotle chilis in adobo sauce (use less if you want a milder version)-16 oz. frozen turkey (or chicken) meatballs (pre-cooked type)
Directions
Makes 8 servings (bowls) of soup.

1. Saute garlic, onion, carrots, celery until just soft
2. Add all other ingredients except chipotles
3. Puree canned chipotles in food processor. Use as much or as little of puree as you'd like. Using the whole can will yield a VERY spicy but yummy soup.
4. Add desired amount of chipotles to soup.
5. Bring to a boil, then, reduce heat and simmer for 20-30 min. until flavor well blended.
6. Serve with a sprinkle of lowfat cheddar cheese on top!
