Ingredients
1 Cup Uncooked Rice (I used long grain)White/Yellow onion, chopped2-3 cloves garlic, minced1 Can Black Beans1 Bunch Fresh Spinach, ChoppedFrozen Broccoli (I used 1/4 bag)AsparagusTomato1 Bunch Kale, ChoppedEarth Balance (For the Rice)Salt
Directions
Cook the rice according to the directions. While that's cooking, heat up a tablespoon of Earth Balance and saute the garlic and onion. Bring the broccoli and asparagus to a boil (blanche) in another pan and add to the onion. Throw in the rest of the veggies and let simmer over medium heat. When the rice is finished, mix in the remainder of the butter and salt and then combine the veggies. Voila!
