Cashew Chicken

Ingredients
1 lb boneless, skinless chicken breasts cut into 1" cubes1 medium onion2 cups frozen broccoli1 3/4 cup boiling water1 cup Uncle Ben's Instant Brown Rice, uncooked1 jar sliced mushrooms, drained1 tbsp chicken bouillon granules1/2 - 1 tsp ground gingerPepper to taste3/4 cups salted cashews, divided
Directions
In a large bowl, combine the first nine ingredients. Transfer to a greased, shallow 1 1/2 quart baking dish. Cover and bake at 375 degrees for 45-55 minutes or until rice is cooked and chicken is no longer pink. Stir in 1/2 cup of cashews. Sprinkle with the remaining cashews.
