Red Berry Amaranth Pudding

Ingredients

1/2 cup amaranth grain, coarsely ground2 cups unsweetened apple juice1 cinnamon stick2 cups berries2 tablespoons of honeyLemon juice from one lemon Lemon zest from one lemon (optional)Pinch of salt
Coarsely grind your amaranth grains by putting them in a spice grinder, food processor, or doing it by hand via mortar and pestle.
Add all ingredients except the honey and berries to a large saucepan and bring to boil over medium-high heat. Let boil until amaranth softens and then reduce to a simmer for 10 minutes.
Take off heat and remove cinnamon stick. Stir in the berries and honey. Pour the pudding into small containers and let cool in a dry place. Remove pudding to refrigerator.
