Leeks in tomato sauce

Ingredients
2 leeks 2 red, ripe tomatoes1 teaspoon of olive oila bit of salt
Directions
Put your tomatoes in a blender (if you want you can peel them first, but this isn't necessary). Blend the tomatoes, untill you get a nice smoot mass. If you do not like the peel or the little pits in your food, pour the blended tomatoes through a siff.
Now cut your leeks into rings of about half an inch. You can use only the white of the leeks (in that case, you should use three leeks if you are going for three servings), but you can use a part of the green as well, according to your own taste.
Now heat the oil and then add the leek. Leave this on the cooker for a few minutes while stirring, so your leek goes a bit glassy.
Then add the tomatoes (the blended sauce you got earlier). Add a bit of salt (and pepper or tabasco, if you would like a bit of extra taste). Leave all this cooking for about 15 to 20 minutes (maybe a bit longer if you do not like your vegetables to still be a bit crunchy).
Ready.
This recipe should be good for three servings.
