Ingredients
1 Lb Chicken20 Baby Asparagus Spears1 PineappleSalt1 oz Brie Cheese
Directions
Peel and cut pineapple into bite size pieces, put into a cold frying pan and salt lightly. Let sit so some juice accumulates in the bottom of the pan.

Trim Asparagus and put in a separate cold frying pan.

Turn heat on pineapple, medium high.

Cut chicken into bite size pieces. Fry, dry, in another frying pan.

When chicken is about 1/2 done turn pineapple up to high, you'll need to stay right there to watch and make sure it doesn't burn. Move it around the pan every minute or so - you want the pineapple tender and the outside seared just a little. Turn asparagus on to medium. You are just looking to roast and tenderize this a little.

You're now cooking three things at once, but nothing needs anything more than a little moving around. There is nothing but salt added to any of these items.

Add chicken and pine apple to the plate and drizzle with this sauce: https://recipes.sparkpeople.com/recipe-detail.asp?recipe=465713. Add brie and then asparagus. Let sit for about a minute to cool and let the cheese melt.

Sit back and mmmmmmm.

I made it tonight and it is wonderful! I used my Orange-Ginger-Oregano Dressing to drizzle over. That was great too. Great recipe. - 6/24/10

I missed the link to the sauce. Will try. Couldn't get pineapple (had to use canned) to sear a bit. Will use cast iron next time. Otherwise a keeper. Thanks. - 1/14/09
