Apple Cranberry Walnut Muffins

Ingredients
2 cups cored peeled chopped apples1/4 cup sugar1/2 cup splenda2 tablespoons oil 1 egg 1 1/2 cups flour (I used whole wheat)1 1/2 teaspoons baking soda 1 teaspoon cinnamon 1 cup cranberries 1/2 cup chopped walnuts
Directions
1. Preheat oven to 350 degrees.
2. Grease a muffin pan.
3. Combine apples, sugar and oil in a medium mixing bowl.
4. Add egg and mix well.
5. Combine dry ingredients in a separate mixing bowl.
6. Add to apple mixture, mixing just until dry ingredients are moist.
7. Stir in cranberries and walnuts (Batter will be dry).
8. Spoon into the muffin cups and spread batter evenly.
9. Bake for 25 to 30 minutes or until a toothpick inserted into the center of the muffins comes out clean.
