3/4 whole wheat flour1 tsp baking powder1 large carrot2 egg whites2 tbsp unsweetened cocoa powder1 cup unsweetened applesauce1 serving kellogg's all-bran cereal3 tsp splenda1/4 tsp cinnamon1/8 tsp nutmeg
Preheat oven to 350`F. Spray a 9-in. square baking pan with non-stick cooking spray.
In a small bowl, mix together flour, baking soda and cocoa powder.
In a separated bowl, combine carrot, egg whites, applesauce, cereal, splenga and spices, mix well thoroughly.
Stir all the ingredients and mix well. Pour the batter into the baking pan.
Bake for about 40 min(or until a wooden toothpick inserted in center comes out clean)and enjoy~

Pretty Good- I used Fiber One instead of allbran. It didn't say to but I pulsed it in the food processer. I also added a little more cinnamon. I topped it with FF Cream Cheese Frosting submitted by "Trixbunnie" & that helped A LOT! Overall good for a 100 calorie piece of cake w/frosting! Thank you! - 1/9/09
