Pouding Alsacien (Gratin of Sauteed Apples)

Ingredients
4 large apples, fresh1 T butter, unsalted3 T plum jam3 T butter, unsalted1/2 cup Splenda3 eggs, separated1 T Flour1 cup Bread crumbs1/2 tsp ground cinnamon2 T pearl sugar
Directions
Quarter, core and peel the apples. Cut into 1/4 inch lengthwise slices.

Saute apples in 1 Tablespoon butter in 12 inch skillet until lightly browned on both sides and tender, but retain their shape. Melt plum jam in skillet and toss well to coat. Transfer to buttered baking dish 8-9" in diameter and 2 inches deep.

Preheat oven to 325 degrees.

Cream butter and sugar in mixing bowl until light and fluffy. Beat in egg yolks, then flow and cinnamon, and finally the bread crumbs.

Beat egg whites until stiff. Fold egg whites into bread crumb mixture and spread over the apples.

Bake on the middle rack for 20-25 , or until the top has puffed slightly and has just begun to color. Sprinkle with pearl sugar and continue baking for another 20-25 minutes until golden brown.

Makes about 10 one cup servings. Serve with whipped cream if desired.
