Whole Wheat Oatmeal Chocolate Chip cookies (dairy free)

Ingredients
1/2 cup coconut oil (or other butter replacement)1 egg1/2 cup honey1 TB blackstrap molasses1tsp vanilla extract1 tsp baking soda1/2 tsp salt1 TB ground flax meal1 cup whole wheat flour1 cup rolled oats1/2 cup dairy-free semisweet chocolate chips
Directions
Makes 2 dozen cookies. (freezes well after baking)

Preheat oven to 350 degrees.

Cream coconut oil, egg, honey, molasses, and vanilla. Add salt and baking soda. Add remaining ingredients stirring in chocolate chips by hand once mixed. Bake on a stone or on a baking sheet that has been lightly oiled or lined with parchment paper. Bake for 12 to 15 minutes until cookies no longer look "wet" on the surface. Cookies will be soft, but will firm slightly after cooling. Let them rest on a cooling rack until cool enough to handle and store in a closed container. Additions such as nuts or dried fruit are fabulous but will change the nutritional information.
