Creamy Spinach Casserole

Ingredients
1 - 10 3/4 oz. can cream of chicken soup4 oz. light cream cheese, cubed1/4 c. fat free milk1/4 c. grated parmesan cheese2 c. Mrs. Cubbison's cube stuffing, herb seasoned1 - 10oz. pkg. frozen spinach, thawed and squeezed dry
Directions
In a large mixing bowl, beat the soup, cream cheese, milk and parmesan cheese until blended. Stir in stuffing cubes and spinach.

Spoon into 1 qt. baking dish coated with cooking spray. Bake, uncovered at 350 for 35 - 40 minutes or until heated through.

**May not need full cooking time as this is 1/2 of the original recipe!!**

    I really loved this recipe and I usually hate spinach!! I used cream of mushroom soup w/ roasted garlic instead b/c it was all I had on hand. I also crushed 1/2 c of the stuffing cubes and put layered that on top to make a crust. Even my husband liked this. Will definitely make this again! - 1/6/09
