Ingredients
2 zucchini -- sliced1 bunch asparagus -- trimmed and chopped2 potatoes -- cooked and sliced4 eggs -- beaten2 TBS light sour cream1/4 cup low-fat cheddar cheese -- gratedsalt and pepper
Directions
1. Preheat oven to 180 C.
2. layer vegetables in a dish
3. Combine eggs, cream, cheese and seasonings and pour over vegetables
4 Bake for 40 mins, or until firm

    This was delicious!! I followed the recipe except I used bell pepper, squash, potatoes and onion. I also used Mrs Dash The Fiesta blend instead of the salt. We will definitely make this again. - 5/25/11
