Pineapple Salsa Salmon

4.5 cups pineapple chunks1 Cup Mild Salsa2 Tbsp Mustard4 Salmon fillets (1 1/2 lbs)1/2 Tsp Lemon Pepper Seasoning
Serves 4 1 fillet per person
Preheat large saute pan o medium heat 2-3 minutes, spray with Pam cooking spray.
Chop pineapple into small pieces
Compine in medium bowl with salsa, mustard, set aside.
Sprinkle both sides of fish with lemon pepper seasoning.
Place fish in pan, cook 3 minutes, turn fish and salsa pipeapple mixture. Cover and redue heat to medium. Cook for 5-7 minutes or until fish is opaque and separates easily with a fork.
Serve with rice, ozo, or pasta.
