Vegetarian Paella

Ingredients
1 1/2 tbsp olive oil1 large onion, chopped1/2 tsp paprika1 1/2 cups uncooked long-grain brown rice3 1/4 cups low-sodium vegetable broth1 14oz. can chopped tomatoes with juice1 tbsp tomato paste1/2 tsp dried tarragon1 tsp dried basil1 tsp dried oregano1 green pepper, roughly chopped3 ribs celery, finely chopped3 cups sliced button mushrooms10 oz package frozen peassea salt to taste
Directions
1In a large, deep skillet, heat oil over medium heat. Add the onions and saute until softened (about 5min). Add the paprika and rice and cook about 4-5min. Stirring occasionally until rice is transparent. Add broth, tomatoes, tomato paste, tarragon, basil, and oregano, bring to a simmer, and simmer for 10-15min. Add bell peppers, celery, mushrooms and peas, and cook for another 30min or until rice is cooked. Add peas and salt to taste. Cook to heat through then place in a large serving dish to serve. Makes 4 servings.
