Grape & Pecan Chicken Salad

Ingredients
Chicken breast, canned- 1 canYogurt, plain nonfat-1 cupGrapes, seedless- 1 cupRed onion, chopped- 1/4 cupRadishes, chopped- 2-3Celery, chopped- 1 large stalkPecans, chopped- 1/4 cupSoy protein powder- 1 scoopCilantro, fresh, chopped- 3 tbspJuice of 1/2 lemonMustard, dry powder-1 tspBlack pepper- to taste
Directions
In large bowl, combine chicken, grapes, celery, onions, and radishes. Toss to mix & separate chicken chunks.

For dressing:
In separate bowl, mix yogurt, soy protein powder, cilantro, lemon juice, mustard powder & black pepper. Mix well, adding water to thin the mixture to a thick creamy dressing consistency.
Pour over chicken mixture. ***may not need all of dressing, do not over dress.
Add pecans and toss. Refrigerate until well chilled, serve over bed of crunchy romaine, or tangy mixed baby greens, or inside a whole-grain tortilla.
