Island Kale & Sweet Potato Soup

Ingredients
2 tblsp canola oil1 onion, diced2 cloves garlic, diced1 jalapeño, diced (with or without seeds)3/4 lb kale (washed well and drained)1 1/2 lbs sweet potatoes (approx 3-4)1 1/2 quarts low sodium chicken broth/stock1 can unsweetened coconut milk(1 cup rice per serving)
Directions
saute the onion, garlic & jalapeno in the oil until onion is translucent. add chicken broth, kale and sweet potatoes, bring to a boil, then reduce heat and let simmer 30 minutes (or until potatoes are done). Stir in coconut milk just to warm through.

Serve in a bowl over one cup white rice.

    I really like this recipe- but it needed extra salt to help with the taste. 12 servings seems unlikely- 4-6 seems more reasonable... - 3/18/11
