Ingredients
3/4 c unbleached flour3/4 c whole wheat flour3/4 c oat bran3/4 c oatmeal3/4 c flax meal1/2 c brown sugar1 tsp baking powder1 tsp baking soda1/2 tsp nutmeg1/4 c flax seeds1/4 c chopped pecans2 c mashed banana3/4 c soy milk (or any milk alternative)6 tbsp warm water2 tsp vanilla extract
Directions
Heat oven to 350 degrees. Line or spray muffin tins. Pour batter evenly into 18 regular sized muffin cups. Bake for 20 minutes or until toothpick comes out clean.
