Easy Chili

2 teaspoon Olive Oil1 Onion (medium)400g. Ground Beef (lean)28 oz Can Diced Tomatoes14 oz Can Red Kidney Beans (rinsed & drained0.5 cup Salsa (no sugar added)
Makes 4 entrées serving (about 1.25 cup each)
- In a large skillet, at medium temperature, stir the onion in olive oil until tender.
- Add the ground beef and stir until in tiny pieces and cooked (as you would for a spaghetti sauce for example).
- Add the Red Kidney Beans (rinsed and drained)
- Add the Tomatoes (with the juice)
- Add Salsa (I used medium Salsa)
Bring to a boil then on low heat let simmer for at least 30 minutes (60 minutes or more is better). I often serve dinner after 30 minutes and I let the remaining Chili on low heat for another 30-60 minutes).
