Cottage Cheese Muffins

Ingredients
2 Eggs1/4 Cream of Tartar1 Tbsp soy flour1/4 cup cottage cheese (2%)1/2 tsp. sugar
Directions
Spray coat a muffin pan. Separate eggs and place egg whites in medium bowl. Beat eggs until frothy. Add cream of tartar and beat until stiff peaks form. In a small bowl combine egg yolks, soy flour and sugar. Mix thoroughly. Gently fold into egg whites. Fill muffin cups 2/3 full (about 6). Bake @ 300 degress for 25-30 minutes or until center of muffins bounce back when touched. Serves 1.
