Easy Fiesta Chicken Salad

~Chicken Breast (1/2 breast)~Lettuce (1/4 head)~Salsa (2 Tbsp)~Kraft Mexican Style Taco Cheese (1/8 cup)
1. Pre-cook chicken (I make 3-4 breasts at a time, boiled in water with lemon juice, basil, & rosemary) Seal in container with some juice to keep moist.
2. Chop up 1/4 of a head of lettuce (about three cups)
3. Cut up 1/2 of one chicken breast and add it to salad.
4. Top with 1/8 cup of cheese & 2 Tbsp of any salsa you prefer. I love Tastefully Simple's Corn & Black Bean Salsa! The corn & beans give it a little variety & added nutrition.
~If you are feeling really adventurous, you can add Tostitos Baked tortilla chips to make more of a crunchy taco salad.
