Tuna & Veggie Medley

Ingredients
1-1/2 Cups Brussels Sprouts, cooked & halved1 Cup Cherry Tomatos, halved2 Cans Solid White Tuna packed in water, drained1 Small Can Spinach, do not drain2 Cups Baby Portabella Mushrooms, halved2 Tbsp Olive Oil2 Tbsp Parmesan Cheese, grated
Directions
Heat Olive OIl in large frying pan on med-high heat.

Halve all the veggies and drain the tuna.

Saute the mushrooms & Brussels sprouts first.

Add the tomato halves, the whole can of spinach (including the liquid), and the tuna fish. Give the ingredients a stir while breaking up the tuna fish.

Cook for about 5-10 minutes (until bubbling and completely heated through).

Divide into two servings and top with 1 Tbsp Parmesan cheese each. Add salt & pepper to taste.
