Robin Smith's Mexican Chicken Soup

Ingredients
1.5 lbs chicken breast2 tsp oil1/2 C water1 envelope taco seasoning1 can V8 juice (11.5 oz)1 jar salsa (16 oz)1 can balck beans (15 oz)1 pkg frozen corn (10 oz)1 large can diced tomatoes (28 oz)
Directions
Saute chicken in oil, add water and taco seasoning. Simmer until chicken is well coated. Transfer to slow cooker and add the rest of the ingredients. Cover and cook on low for 3-4 hours. Serve with toppings - cheddar cheese, sour cream and chopped cilantro.
