Vietnamese Rice Noodle Salad

Ingredients
1 cup of cooked rice noodles at room temp1/2 cup shredded lettuce1/2 cup bean sprouts1/2 cup cucumber with peel, cut in thin strips3 oz salmon, pork or chicken cooked with a teriyaki glaze (maple syrup, soy sauce and garlic) and then flaked (recipe uses salmon, other meats change nutritional info)Sauce: 1 tbs thai or vietnamese fish sauce1/2 tbsp white vinegarsugar or stevia to tasteGarnish:2 tbsps sliced green onions2 tbsp chopped peanuts
Directions
Mix together sauce ingredients and set aside.

In a bowl, layer lettuce, cucumber sprouts, noodles, flaked meat or salmon and then top with peanuts and green onions.

Pour dressing over, serve.
