WLS Crock Pot Spicy Beefy Beany Taco Soup

1 16oz container of Ground Chuck1 cup raw chopped white onion1 can Kidney beans1 can Northern beans2 cans chunky Rotel1 can Black beans1 can Mexican corn1 quart beef stock4 Cups of Water2 packets Taco seasoning (I used Taco Bell Chipotle)
Brown ground chuck and onion together. Drain if needed. Throw into crock pot and add all of the other ingredients. I used the Rotel juices, but drained the juice out of everything else. I added the stock and water after all of the solids were combined and then added the taco seasoning.
I put the crock pot on high and cooked for 3 hours. Then, I switched it over to low until ready to eat. If you'll be leaving in the morning, put it on low all day long. My crock pot is a true slow cooker, so you may have to adjust heating times.
Appears to make about 16 Cups. That's just a guesstimate. Made by a Weight Loss Surgery patient. Adjust nutritional info to your own needs. Most people will eat more than 1 Cup.
