Chicken and Black Bean Enchiladas

Ingredients
Chicken Thighs (or breasts), black beans, sour cream, shredded cheese, enchilada sauce
Directions
Saute chicken in olive oil; season with garlic, pepper, salt & taco seasoning. Cook until done; add drained black beans, sour cream and 2 Tbs. of the enchilada sauce and 1/2 cup of the cheese. Blend in food processor until even texture. Fill 7-8 whole wheat tortillas, adding a small amount of cheese to each one. Top with sauce and remaining cheese. Bake for 20-30 min.
