Spaghetti Squash Stroganoff

Ingredients
1 spaghetti SquashNonstick Cooking Spray1 Onion1 lb. ground turkey1 can beef broth1 can cream of mushroom soup4 oz. Neufchatel cheeseSalt and Pepper
Directions
Makes 4 servings (divide total amount into 4)

Cut raw spaghetti squash in half and scoop out seeds. Place face down in a cookie sheet in the oven on about 400 degrees for about 30 to 40 minutes. When spaghetti squash is done, remove from oven and scrape out the spaghetti-like strands using a fork and tongs (careful not to burn yourself!)

Meanwhile, prepare sauce mixture. Using nonstick cooking spray, add diced onions to a very large nonstick pan or wok and keep heating and stirring until onions are translucent. Add more nonstick cooking spray if necessary, then add the ground turkey. Keep stirring until turkey is cooked. Add beef broth, and cream of mushroom soup. Mixture will be very watery - not to worry. Add the spaghetti squash to the mixture and let it simmer until it reduces and thickens. Finally, add the neufchatel cheese which will make the mixture extra creamy.

Season with salt and pepper to taste.
