Hearty Split Pea Soup

Ingredients
1 bag Goya Dried Split Peas1 Cup Onion finely chopped1 Medium Carrot coarsely chopped10 ounces 97% fat free Ham-I prefer Smithfield1 tbs fresh minced garlic8 cups waterSalt and Pepper to taste
Directions
Always make sure to check through the contents of dried peas or beans when you use them for any recipe. You never know when you will find a tiny pebble or rock mixed in with your beans, and it's not fun to bite down on something that doesn't belong in your soup pot.

While sorting through your dried peas, pour 8 cups water in a large pot and bring to a boil. Add dried peas to pot and bring back to boil. Boil for 10 minutes, stirring frequently. While the soup is boiling, chop ham into bite sized pieces and sautee in a Pam sprayed skillet until lightly browned. Add ham and all remaining ingredients, reserving 1/4 cup onion, to peas and reduce heat to low. Simmer ingredients until peas have cooked through, about 3 hours. At this point, you can also transfer the pea soup from the stove into a crock pot and cook for 4-6 hours on a low setting.

When serving soup, use the reserved 1/4 cup raw onion for garnish on top of the hot split pea soup for a wonderful crunchy taste to go with the creamy smooth texture of the split peas and the smoked flavor of the ham. This soup is always a favorite and is low enough in calories to have for lunch or hearty enough to have for dinner.
