Mo's Low Sodium Potato Salad

Ingredients
8 medium russet potatoes, peeled, diced, and boiled2 large stalks celery, diced4 large eggs, boiled, peeled, and dicedDash saltDash black pepper1/2 cup Hellman's Mayonnaise with Extra Virgin Olive Oil1/2 cup sour cream4 Tbsp fresh cilantro minced1/4 red bell pepper, diced1/2 tsp paprika
Directions
Combine all ingredients in a large bowl, setting aside 1 Tbsp cilantro and 1/4 tsp paprika. Mix well. Sprinkle with remaining cilantro and paprika to garnish. Makes 16 1-cup servings.
