Ingredients
Directions
1/2 cup Land O Lakes light butter w/ Canola Oil, softened1/2 cup Unsweetened Applesauce2/3 cup Brown Sugar Splenda1 1/2cup Splenda 1 tsp Vanilla Extract1/2 cup Egg beaters2 1/4 cup Bob's Whole Wheat Flour1 1/2 tsp Baking Powder1 tsp Baking Soda1 tsp Salt1/2 cup Mini Chocolate Chips
Preheat oven to 350 degrees. Spray cookie sheet with Pam. Mix together whole wheat flour, baking powder, baking soda and salt and blend well. Set aside. Cream together brown sugar splenda and light butter until totally mixed. Beat in egg beaters until mixed in. Slowly add in regular splenda until combined. Add in vanilla and applesauce and combine. Gradually beat in flour mixture. Do not over beat or whole wheat flour will cause cookies to turn out tough. When flour mixture is totally combined, gently mix in chocolate chips. Drop by rounded teaspoons onto cookie sheets and space evenly apart. These cookies do not spread out as much as traditional cookies, so where you place them is pretty much where they will stay.
Bake 11-13 minutes or until done. Do not over bake. These cookies will appear brown before they are finished because of the whole wheat flour. Let cookies rest on sheet after you take them out of the oven for 2-3 minutes and then cool completely on a wire rack. This recipe makes 4 dozen (48) cookies.
