2 leeks, cleaned and sliced1 carrot, scrubbed and sliced1 potato, peeled and cubed3/4 t. salt3/4 t. pepper1 m. zucchini, slived1 c. chopped and trimmed green beans1 c. fusilli pasta1/3 c. red kidney beans2 T grated parmesan cheese2 T minced basil1 T tomato paste1 garlic clove, minced4 t. olive oil
1. In a large saucepan, combine leeks, carrot, potato, salt, pepper and 5 cuts of water, bring to a boil. Reduce the heat and simmer, covered, stirring occasionally, for 30 minutes
2. Stir in zucchini, green beans and fusilli' simmer about 10 minutes.
3. In a small bowl, whisk the cheese, basil, tomato paste and garlic. Whisk in the oil in a slow, steady stream. Stir 1/2 cup of the hot broth into the basic mixture; gradually stir the basil mixture into the soup.
