Golden Pork Curry

Ingredients
1 tbsp Extra Virgin Olive Oil2 Pork ribs (no bone), cut into 1/2" pieces1/2 Onion, sliced1 packet of Golden Curry (3.5 oz)5 Potatoes, peeled and cubed4 Carrots, peeled and sliced
Directions
Slightly brown the pork and saute the onions in the same pan.

Cover the curry with water in a mug and melt (about 2 minutes) in the microwave.

Add cubed potatoes, coined carrots, curry mix into the pork and onions. Barely cover with water. Cook on low about 20 minutes.

Serve over rice or noodles (not included in calories).

Makes about 8 one cup servings.
