Spanish Rice

Ingredients
2 tbsp canola oilUncle Ben's Instant brown rice, (enough to yield 6 cups)1/4 cup onion1/4 cup cilantro1/2 tsp minced garlic14.5 oz can of diced tomatoes w/jalapenos1 tbsp cumin
Directions
Makes 8 - 1 cup servings

In a large skillet add canola oil. Saute' rice, onion, cilantro, and garlic until onions are tender. Add water (as directed in rice instructions). When rice is done add diced tomatoes with jalapenos and cumin. Heat an add'l. 5 mins.

    I lived in New Mexico, and it was always standard practice to saute the rice before boiling it, just like in this recipe. - 1/11/09
