Wheatberry Salad with Oranges and Avocado

Ingredients: Wheatberries, 1 cup raw1 large Oranges1 sweet red pepper1/2 cup chopped red onion 1/4 cup fresh chopped Cilantro1 chopped Avocado 1/4 cup Canola Oil1/4 cup fresh Lemon Juice1 tsp Dijon Mustard1 tsp Chili powder1 tsp Cumin seed1 tsp Coriander seed1 tsp Hot Pepper Sauce
Directions
boil 1 cup wheatberries for minimum of 1 hours. Rinse several times after cooking.

Section the orange and add the sections to bowl along with pepper and red onion

Make dressing ... add cilantro and avocado

makes 6 - 6 cup servings
