Shrimp Broccoli mix over Potatoes

2 T Olive Oil2 cloves garlic, chopped1 sm onion, chopped (about 1/2 C)1/2 C chopped bell pepers1 C chopped broccoli24 medium shrimp1/2 C chicken broth1 T cornstarch1/4/1/2 t water4 small baked potatoes
Bake Potatoes til soft.
Heat oil. Chop Garli, onion and peppers, add to hot oil, medium heat. Stir to soften. Add chopped broccoli til thawed. Add chicken broth and shrimp. Cook til shrmip is pink. Mix 1 tbls of cornstarch with 1/4 t of water making thin paste. Add to cooiking mix to thicken.
Spoon mix over potatoes sliced in half lengthwise.
1 sliced potato with 1/4 mix per serving
