Spinach fritatta

Ingredients
1 10 oz. pkg. frozen spinach or 1 lb. fresh, cooked and drained3/4 c. Egg Beaters1/34 c. grated fresh Parmesan cheese1 clove garlic, minced1/4 c. chopped parsley1/2 c. bread crumbs
Directions
1. Cook spinach according to package directions. Drain well, squeeze, and chop.
2. Add rest of ingredients and blend well.
3. Drop by spoonfuls onto heavy skillet which has been sprayed with oil (Pam, etc).
4. Cook on both sides until golden. Serve warm.
