Thai Chicken Noodle Soup

Ingredients
2 Tbsp. canola oil1 med. onion, quartered and thinly sliced3 garlic cloves2 poblano peppers, seeded and thinly slicedsalt & pepper1 cup shredded carrots6 cups chicken stock or broth2 chicken breasts cut into bite-size chunks1/2 box rice noodles3 Tbsp. fresh cilantro leaves2 Tbsp. basil leaves choppedjuice of 1 lime
Directions
Heat a large, soup pot with the vegetable oil over high heat. Once you see the oil ripple, add the onion, garlic, and sliced peppers. Season the vegetables with salt & pepper. Cook stirring frequently for 2 minutes. Add the carrots and the chicken stock. Cover the lid and bring up to a simmer. Once simmering, add the chicken and noodles and simmer for 10 minutes more. Remove the soup from the heat and add the cilantro, basil, and lime.
