Raisin Bran Muffins

Ingredients
1 qt lowfat or fat free buttermilk5 1/2 cups Raisin Bran1/2 cup unsweetened applesauce1/4 cup plus 2 T oil7 T ground flax seed + 3 T water3 Eggs4 t baking soda2 t salt3 cups whole wheat flour2 cups all purpose flour2 cups sugar1 cup splenda1/2 cup raisins (optional)
Directions
Soak raisin bran in buttermilk for 15 minutes or until soft. Stir in remaining ingredients. Fill muffin cups half full. Bake 16 minutes or until toothpick inserted in the center comes out clean. Bake at 400 degrees.
